Grilled Corn Salad


Oh how I love grilled corn. It is definitely one of summer's best dishes. This past weekend was my first grilling weekend, so there was, ofcourse, corn on the cob out there. I added a few extra cobs so I could make a corn salad later this week, and here it is:

Grilled Corn Salad
4 cobs of fresh grilled corn
1 TB of olive oil
3/4 tsp of apple cider vinegar
3 scallions, chopped
Coarse salt

Place the corn pointy side up on a cutting board and carefully use a knife to cut the kernels off the cob. That part can get a little messy, just to warn you. Put all of the corn in a bowl and break up any large clumps of kernels. Add the olive oil, vinegar and scallions. Season with a couple pinches of salt.

So simple and delicious!
