Strawberry Jelly


One of the things I made with these eight pounds of strawberries was strawberry jelly. Oh man is this stuff good. It's so sweet and the touch of tartness from the lemon makes it extra tasty. I don't really know much about real preserves and such, so this isn't the kind of jelly you can keep until next year. You'll have to keep it in the fridge and eat it within a few weeks. I assure you that won't be a problem.

Strawberry Jelly
5 cups of hulled and sliced strawberries
Juice from half a lemon
1 teaspoon of finely grated lemon zest
1 cup of sugar

Add all of the ingredients to a heavy bottomed pot and bring to a boil. Once boiling, reduce heat to medium and cook until the mixture thickens, stirring often. This could take up to an hour. The jelly will look pretty liquidy, so here's a neat trick to see if it's ready: keep a small plate in the freezer, spoon a little bit of the jelly onto it, if it solidifies then it's ready!

Pour into jelly jars and refrigerate. Then spread it on everything.

    I always pass up the huge boxes of strawberrries because I know two of us wont get through them before they turn. I have no idea why I never make something like this!
